We actually get Shelburne Farms cheeses shipped to us and they are good in their vacuum packaging for easily a year. I do still pack them in a second vacuum pack.

Here's a tip.

After you open cheese, wrap it in a single layer of paper towelling in a ziplock bag and it will stay good for weeks as long as you keep replacing the damp paper with fresh every week or more if it is a soft, moist cheese.

Though this is all Wellington and Gouda, it's Morbier I Cantal Muenster to not Swiss I could Havarti some! :drool: :slap:
