Why not? Health? I feel better eating healthier meats although I still go off the healthy diet and eat sausages and pepperoni and the like.... still grass fed free range bison or cattle is so much tastier and healthier than the standard grown meat products....
Sorry, I just noticed your question. Yes I eat very little meat for health, specifically I need to watch my cholesterol. I restrict butter, cheese and land-based meat to almost nothing, though I allow myself all the fish I want. Truly though, I adore all the crafts and pleasures around eating meat and I treat myself once a week to a meaty dish guilt-free.
Last week, it was half of a good fatty burger with topnotch Canadian bacon, oozy cheddar cheese and an indelicate smear of homemade aioli laced with Spanish paprika. Oh God. It was so good.
