Cook your rice in broth instead of water before adding it to the soup.
 
um, what about italian wedding soup? that has to have rice in it and it's delicious...
 
Rice and water....it is called congee. And it's delicious with anything. Even anchovies.

I'm not a big fan of rice in soup, either...

Rice - or anything else - is fair game for soup - (or stoup- or stew) --

as Soup - by my definition - is anything that you don't wanna use again f something else - goes into the pot and becomes delicious SOUP -- yes, even with RICE in it !!

Chicken lemon rice is my favorite soup of all time. Especially when it's extra lemony.

I don't like those cheap, Ramen noodle soup cups with egg noodles.

Meh.. edd noodles and white rice are probably equally as bad for you though.
 
I feel the same way about barley, and it keeps expanding so you never get to the end of it. Ugh.
 
Agreed.

Rice is delicious. Soup is delicious. Rice in soup is disgusting.

(And Italian Wedding Soup should never include rice.)
 
I could make an exception for congee which is really more a porridge than a coup.

But thanks to an unfortunate diaper experience with one of my kids, congee is forever on my NOT WANT list.

I hate to state the obvious, but of course we're NOT talking about rice served with soupy liquids here, right?

I'm assuming risotto is also safe from disdain, short fatty grains of rice simmered until pudgy in stock...

I just need to check. If you don't like 'rice in soup' (avgolemono :cry:), fine. But if your offensive is broader I will rally my troops.

I can't speak for Pianist, but this is my take. Risotto is excellent.
 
Chicken and rice soup is delicious, especially on a cold day! Beef and rice soup is delicious too!

Contrary to popular belief, Italian wedding soup was not served at Italian weddings.

The "wedding" part of the title refers to the "marriage" of the various ingredients in the soup.

Chicken, little meatballs, barley, etc. The Italian part probably came from the fact it often has basil and oregano in it, two very Italian herbs.

Hence the name, "Italian Wedding".
