I was watching a YT video from Pasta Grammar, and demonstrated both Northern and Southern Italian variants.
After learning the distinctions, the thing I enjoyed most was the quote shared at the end when talking about the Southern variety (my father's line is from the bootheel). The region was once a Greek colony, and their observation about the inhabitants was, "they build [temples] like they will live forever, but they eat like they will die tomorrow!"
