The secret to cooking good beans...

Let me tell you, as a French-Canadian, "You haven't lived until you experience Pork Hock stew or as we say: Pattes de cochons".

This is such a delicacy, that we serve it with meat pies ( tourtieres), Turkey, sweet potatoes, wiped potatoes and other vegetables on Christmas night. This heavy, heavy meal is eaten after midnight church services at Christmas. Of course, generally libated with gallons of wine, Gin and whatever mix you fancy, then a beer or two. When you crawl into bed at 5.00 a.m. you thank the Lord that you have 364 more days before the next such meal.

Since there was a thread about old threads coming back, I thought that I would "bump" this one up since cold weather is coming.

What's your favorite side dish for a pot of beans?

Mine is Jalapeno Cornbread! (!)

We always had freshly baked white bread with the pot of beans. But the cornbread sounds lot's better.
Course I grew up in Utah.... at least we did get the ham hock thrown in with the bean as they cooked though.
Always like lima beans or navy beans best too.
Thanks for the recipie Centex.... I printed it out. Will definitely be used when I make my next pot.
 
my mom's stewed beans with oregano and knor was good.

add some of my mom's homemade tortillas to go along with a bowl of those beans and i'm in heaven. ..| :gogirl: (!)

Man, being a Southern born U.S. guy, I miss all those treats from my childhood!

I can make them; but they don't taste like my Mom's always did!!

I watched her and put the same ingredients; but I guess I left out the LOVE!

My Dad love's it when I make Jalapeno Cornbread. I can't keep him out of it long enough to have any to go with the beans! :D

I love northern white beans cooked with ham hocks and served with cornbread. It's one of my favorite meals.
