Let me tell you, as a French-Canadian, "You haven't lived until you experience Pork Hock stew or as we say: Pattes de cochons".
This is such a delicacy, that we serve it with meat pies ( tourtieres), Turkey, sweet potatoes, wiped potatoes and other vegetables on Christmas night. This heavy, heavy meal is eaten after midnight church services at Christmas. Of course, generally libated with gallons of wine, Gin and whatever mix you fancy, then a beer or two. When you crawl into bed at 5.00 a.m. you thank the Lord that you have 364 more days before the next such meal.
