I like the hot Italian sausage more.
As for the onions.... not a fan. The recipe I have for Beef Stroganoff calls for two fist sized onions. I but the flattest white onions I can find. Milder. After cooking the Stroganoff for a few hours there are no onions. They melt away and leave their sugar.
I suppose the onions get a bit caramelized in butter before adding the sliced mushrooms.
