Sprouts need a special recipe and not to be overcooked.

I'll boil them for a few minutes until they're half cooked and then fry them off in butter with sweet chestnuts. I cook the turkey covered in smoked streaky bacon. I'll chop up some of the cooked bacon from the turkey and add it to the sprouts. Overall, the butter, chestnuts and bacon stop the sprouts from tasting so sprouty.

This has been a huge wake-up call about vet care in Ontario.

Corporations have been buying up all the practises as the vets retire and now just have vets on salary.

Out in the boonies, many clinics are now 8-6 and have no inpatient care.

Even the one emergency clinic near us that apperently is the only one to serve a vast area has only emerg care docs and no surgeons (Our old vet down the road did surgery on small and large animals).

And even more astounding now is that there is no network of colleagues...the vets now working out this way have no actual connection to or even knowledge of actual people who offer secondary and tertiary care. Our emerg clinic says that they would phone around the province to see if their is an emergency clinic that would take her in, so maybe something 4 or 5 hours away? Apparently only animals in the larger cities now have care available.

I still haven't got my head around how in the space of less than 10 years, the entire animal health care system has been converted to a corporate model with the only real objective being the profits on the bottom line.
