Attention What are you having for dinner?

Amy's Enchilada with Spanish Rice and Beans (frozen dinner). Every time I have this, I think of frozen Mexican dinners, which were the only frozen dinners I ever had growing up. (Frozen dinners were not a regular thing--and actually more likely to show up for lunch).

I also had some whole wheat bread.

Now resisting the temptation to have some candy as a dessert.
 
Leftover fried chicken cut into chunks in a quesadilla with onions and cheese and some green mole. Served with a side of avocado and tomato slices.

Strawberries and bananas in vanilla ice cream for dessert.
 
Last night's dinner was homemade chicken salad sandwiches on fresh Kaiser rolls with lettuce and tomato. Dessert was mango sorbet.
 
We were supposed to be out for a Tibetan fest today but rain got in the way.

So, the tuna casserole we were making to portion and freeze will be tonight's dinner...pure comfort food on a damp, coolish day.
 
I went to ShopRite and bought some Havarti with dill and some Castello blue cheese that was not bad and some flatbreads and some kalamata olives and jar of roasted peppers.

Washed that down with a half a bottle( so far) of Kevin O'Leary Red Zinfandel.
 
Currently cooking lentils with a mix of vegetables. It won't be a gourmet feast, but it's something to eat, and I was able to finish a couple of things off in the refrigerator.

Oh, I love tuna casserole. Seems like my Mom always made it better than her kids to make it these days. How do you top it off? The only think crunchy I remember it maybe bits of the baked casserole and not something that went on top that was already crunchy before baking (like potato chips).
 
Mushroom Stew. Actually it is the same recipe as beef stew except I am using Portabellas instead of beef to cut down on the fat. I use 4 cups of beef stock to give it some of the beef flavor, which the box says is fat free.

For lunch I went to Burger King in Strongsville, Ohio to buy a chicken sandwich. I had a discount coupon. This is the second time I was at this restaurant and the people were really helpful and pleasant. You don't expect fast food employees to be pleasant and helpful.
