Attention What are you having for dinner?

Had a late lunch Tuna hoagie with lettuce and tomato and horseradish. Was good but the horseradish was so strong I sneezed about 9 zillion times.

Well that a bit exaggerated. Maybe ,it was only 8 zillion. Or maybe the allergies are kicking in. :confused:

Made sandwiches of grilled chicken breast with wilted spinach and garlic with some jar roasted peppers and smoked provolone cheese and sliced tomato on french bread. Rolled them in foil and put in the oven to get nice and crusty and melty.
 
A colleague in another department is leaving my firm tomorrow, so I rose early on Wednesday to make two fresh strawberry coffee cakes, one for her department, and one for mine. Wednesday is one of the days people come in the office.

So, at 5:30 while both cakes had made it to the oven, I turned to the fridge after dishes were done and scanned for whatever. A package of 80/20 ground beef was fast approach the Event Horizon, so I decided I was going to take hamburgers in for the boys on my aisle for lunch. Our food trucks are outrageous.

I mixed garlic, onion powder, S&P, Worcestershire sauce, cheddar cheese, and soda cracker crumbs. Four brioche buns were waiting so I knew how large to make the patties. The cast iron seared them nicely and the cheese leaked out just enough to make the most amazing blackened-but-not-bitter crust and they were just thick enough to not be niggardly.

Only three would fit, so the fourth and largest had to appear as an encore on the skillet stage after the others finished. They looked good, but I was a bit uncertain because the meat was not as fresh as I would like, but not turned.

While waiting on the cakes to finish, I gathered Tupperware to take the mayo, mustard, dill slices, sliced tomatoes, iceberg lettuce, avocado and cheese slices so the burgers for lunch would be just right. At this point, I should clarify that this is all presaged by my having bought a large toaster oven three weeks ago for $11.50 at a thrift store, and took it to work so we could heat something in our area and not rubberish it in the microwave.

Lunch came soon enough, and I had three patties with me, as I expected only two guys to join in. It's been a hard week, so I was looking forward to the treat, when suddenly, Mike, who had already eaten lunch, got up and made himself a burger with the third patty. Undaunted, I resolved myself to make an IMPOSSIBLE burger with all the fixin's but the burger, and filled it with half a ripe avocado instead. It was great.

All that to say, TONIGHT, when I got home, I dug out the large patty and warmed it. I toasted the brioche on a dry skillet, then after it was crunchy, fipped both faces back down with a thin slice of cheddar on both. It melted nicely, but didn't stick since my cast iron is cured. Heated the burger quickly and forewent all the amendments. Oh. My. Goodness! That was a great burger. Literally restored my will to live after the County fiasco.

I was inspired by a video to try making pasta and peas. It would, if nothing else, be a break from soup, soup, and more soup. But I put too much water in and so ended up sort of soupy. Sigh. I guess I'm just too used to pouring in lots of liquid into the pot. Maybe next time...

I love horseradish :love: It is also more effective than any sinus medication.

I love it as well. We buy those tiny jars of Inglehoffer brand. And it does say extra hot. But this was beyond that.

Incidentally a small amount of fresh grated horseradish is good on some broiled fish.
 
So, not having them tonight, but yesterday I made these little potato poppers in mini-tart tins to see if they were any good and whether we could freeze and reheat... or serve them as an appetizer for a party and they were pretty good.

Tonight I think it is soup.
