What did you have for dinner?

Three empanadas (beef, krab, oaxacan cheese and cranberry) and octopus ceviche. I like octopus. A friend won't eat them because they are too clever.
 
Grilled sirloin steak, salad and boiled new potatoes with sour cream, butter, shredded cheddar cheese and chives. Apple pie for dessert.

The girls got dinner ready -

Some steel head trout,
chicken breast - coated w/ mayo then encrusted
Veggie Lasagna (Stouffers)

Pumpkin Cheesecake and some ice cream for dessert.
 
It's a South American grain that qualifies as a Super Food. Kind of nutty flavoured. Not a large as rice, but perhaps crispier.

Yup. Very tasty. It's actually a seed, which is why it's much lower in starch than rice and other grains. It's a great source of complete protein, so it's a good addition to a vegetarian diet.
 
I've had it a couple of times - can be very tasty.
Getting the rest of my household to get excited about it can be a challenge, though.

Tonight I made a rice pilaf and a asparagus stir fry with chicken strips and spicy teriaki sauce
 
I was having a craving.

It was non-typical.

It was stuffed mushrooms.

Stuffing is bread crumbs, garlic, grated mushroom stems, grated parm/romana chz, olive oil and a tableable spoon of home-made marinara sauce.
 
From the pupuseria, two pupusas. One with shrimp and one with pork and loroco flowers.

I've never eaten loroco flowers before, and I'm afraid the pupusa gave me no impression of them beyond "green." It would be nice to taste them in a dish that showed off their character a little better.

It's really easy to cook. One part quinoa to two parts water, bring to a boil, then turn down to a simmer and cover for about 15 minutes. I usually cover it with cheese and then spoon the chili on top, but it can be served plain as a side dish. Or you could try topping it with cotija (a Mexican cheese similar to parmiggiano).

Nom Nom Nom..... now I have a craving for stuffed mushrooms..... can you send me some home-made marinara?
 
On the quinoa front, I learned from a local Peruvian joint how big the grain is in their pantry. It seemed like they were adding the grain to more of their dishes than not. So for more recipes, it may be worthwhile to look for "Peruvian quinoa" dishes. :)

As for what did I have to dinner tonight?

My 16YO made a tasty chicken stir fry w/ some pineapple and other ass't flavors.

Then I snacked on some kettle corn and potato chips - needed some salt, I think - didn't have much in the stir fry.

For dessert - some honey-roasted peanuts and toll house morsels.
And 1% milk.

But I'm going to be home THIS weekend -- and will DEFINITELY try it out...

It ALMOST looks like something you can REPLACE rice with -- that is less starch and more protein... :D

We LOVE our collard greens served over rice -- and I THINK this MIGHT work PERFECTLY!!!

Sorry I cannot add to the dinner thread when I'm on the road -- as I rarely eat dinner while traveling...

THANKS AGAIN for introducing me to a NEW food that I THINK I'll LOVE!!!
