Thanks for the clarification - Sounds reasonable as a base, maybe with some grilled Tilapia or Red Snapper? Ocean Perch in a cornmeal dusting?
Sorry, I need my protein in more than beans most of the time.
Last night was the exception - my salad had cheese and kidney beans for the protein.
Although, we do/did make a nice, meaty but meatless "fast sauce" reminiscent of ratatouille that we used to can, when my inlaws still had their house garden. Tomatoes, zucchini, summer squash, onions, peppers, basil, garlic, pepper, maybe a touch of oregano.
We'd make in large turkey roaster, then can. Middle of snuggle in Winter time, open a couple of cans, put in cast iron deep-skillet, w/ olive oil, a little more garlic, simmer down till thickened - not too long. Serve over pasta of your choice with lots of shredded parmesan or romano.
