OK...ginger, garlic, oregano, cinnamon...and more I can't think of this extemporaneously.

Oh...BLACK PEPPER! I use a lot of it.

In some things like soup, I use seaweed as though it's a spice (but I use it liberally).

Except when I make chili, I don't use many spices in my food, though I love spicy cuisines.
 
I heard an interview recently with a man who designs smells for a variety of commercial establishments that vanilla is the most universally loved smell, that even new-born babies respond favorably to it.

I particularly like nutmeg and cinnamon. My partner is partial to saffron.
 
I grow my own herbs, so it depends on what is in season.

My bay tree always delivers! I have a marjarom-oregano non-annual hybrid that is probably my fave. But depending on the season, parsley and coriander/cilantro (the seeds/leaves of the same plant) are fantastic.

As for the annuals, summer savory w/beans tops the list!
