Oh Lex #-o

I love making soup. I usually make vegetable soup using a beef or chicken stock base. I put odd vegetables in it, not the usual ones in canned soups.

Minestrone is good and relatively easy to make. I also had some delicious pear and watercress soup recently.

Chicken noodle

Boil a whole chicken (don't forget to remove the giblets from the cavity) in a large pot of water until done
remove it and allow to cool, keep the water in the pot on warm

meanwhile, dice a bag of carrots, a bunch of celery (including the leaves) and a large yellow onion

remove skin from chicken, remove meat from bones and shred by hand, bite size strips

place shredded chicken meat and all vegetables in the water, add a bundle of herbs tied together with kitchen string (rosemary, thyme, sage), salt, pepper and two cups of egg noodles (the whole wheat egg noodles are really good), boil again for 20 mins

if you don't want the fat in the soup, just chill it in the fridge overnight and skim it off the top the next day before reheating, but the dissolved fat from the skin in the broth is very flavorful

or, you could use skinless chicken parts for this but make sure they have the bones in for flavor

I love French Onion Soup, it's a hearty soup for cold wet days.

Roasted creamy tomato soup and a nice sandwich, my fav.

Anything with the word creamy in it I like.

Oh, I forgot about Italian Wedding..|

I love a lot of soups. Butternut squash bisque is one of my favorites. I also enjoy gazpacho.

I try to try chilled soups whenever I get the chance.

I'm a huge corn chowder fan, but I haven't made it in years. Vegetarian pho is also nice on cold days, and if I'm feeling a bit decadent, I don't mind slurping down a crock of vegetable-based French onion soup.

My honey who is a amazing cook makes a Chicken Tortilla soup

and a Chicken Enchilada soup that is to die for.....

I just made my self hungery---..|

Oh dear-- can you make me some soup-----(!)

Vegetarian pho? :bartshock

;)

I'm with LilBit on the corn chowder, though. You should still be able to find sweet, fragrant fresh corn before autumn hitches the garden gate. If you make it, simmer the soup with the unkerneled cobs in the stock--you'll get a huge flavor bonus from them.

You should also be able to find end of summer tomatoes. They won't be here for much longer....
