There's the soup of all soups....

Paula Deen's TACO SOUP.

It's delicious, it's kind of a pain to make, it's loaded with salt and MSG....
It's pretty easy to replace the seasoning mixes with dried herbs and spices. That'd cut down on the salt and eliminate the MSG. I always make my own taco/enchilada seasonings because it's cheaper, healthier, and tastier than the stuff that comes in packets.
 
my mom has been on me to make soup for weeks now... why, I don't know.

I don't really like cooking, have never made soup before, and have never had a desire to make soup before, but for some reason my mom has it in her head that I make great soup :confused: ](*,)

I can't decide what to make, though.

Given the season it's a great time to make chicken tortilla soup, pumpkin bisque, potato & rosemary soup, beef or chicken pho, or a kick-ass pozolé. I just made a big pot of red pozolé yesterday myself.

Soup is easy given it only takes a couple of pans and a nice big cast iron pot. All my other kitchen stuff has been shipped over to my new house and I only have a few remaining thing here in the US.

Do you use a recipe, or do you just eyeball it?
I'd love to get a recipe cos I usually use the seasoning packets, but would rather just use the herbs and spices themselves.
I just eyeball it. I usually use a combination of cumin, chili powder, cayenne pepper, garlic, and onion powder. For a pound of ground beef (or vegetarian equivalent) I probably use about 1/2-1 tsp of each, depending on how adventurous I'm feeling.

I do use canned enchilada sauce, though. *blushes*
 
Tomato, Vegetable, or Roasted Corn are my top 3 picks. These of course are Homemade, I have never to this day had can soup, my great grandmother always made it.
 
I love minestrone, i love tomato soup with croutons, i also love broccoli cream soup with croutons and sprinkle cheese.
 
I have chicken soup at restaurants on a regular basis. (I don't like to cook). But my all time fav soup is Potato Bacon soup! The only place I've found that really makes it right, is a restaurant chain called Houlihan's . Yum!

OMG BROCCOLI CHEDDAR SOUP.

Although Seafood chowder is good too. Can't beat broccoli and cheese.

I have an addiction to Panera Bread's broccoli-cheddar soup. It's like crack. I had it for lunch for several weeks in a row... and then I stopped because it's definitely not healthy. Has a crap ton of sodium in it. :(

And now I'm craving a bowl of it. Damnit.
 
a lot of home cooks don't have the time/desire to prepare beans from scratch.

If a home cook doesn't have the desire to do something as easy as cook a pot of beans (or chop a few veggies, etc.) I wonder why they're not simply opening a can of already prepared soup? The result will be similarly lacking. I know that may seem like a snooty opinion !oops! to those who don't cook much regularly, but I genuinely care about good food and want people to eat delicious, quality food and enjoy themselves (*8*). The skills involved in raising the standards above Paula's nadir (open cans, stir) are easily acquired; there's no reason not to exceed them. :D
 
don't get me wrong, I'm all about cooking from scratch, but sometimes, cooking is a matter of "what can I get on the stove in the next 15 minutes before the (kids, spouse, boyfriend, friends, etc) get home?"

Yeah I do it, too. I just don't want to encourage it! :cool:

Love a hearty Italian minestrone soup liberally sprinkled with finely grated parmesan.

A friend of mine also makes a creamy cauliflower soup which is delicious.

My favourite is tomato-orange soup. Really, really delicious! Try it and see for yourself ....

Tomato-Orange Soup

2 x 450g cans chopped tomatoes
2 x medium carrots, peeled & roughly chopped
1 large onion, peeled & roughly chopped
2 x sticks celery, chopped
half a cup of freshly squeezed orange juice
1 - 2 teaspoons finely grated orange rind
4 - 5 cups chicken stock (I buy the ready made stock, or you can use chicken stock powder)
2 dried bay leaves
salt to taste
good pinch of cayenne pepper.
grated parmesan
chopped parsley

Melt about a tablespoon butter in a large pot, add carrots, bay leaves, onion & celery; stir-fry on medium heat for a few minutes, then stir in the stock, tinned tomatoes (including juice). Bring to boil, stirring occasionally, then put lid on pot, lower heat to a gentle simmer and allow soup to simmer for about half an hour. Remove from heat, blend soup in blender till smooth (after blending I also pour & shake the soup through a wire sieve for extra smoothness, but you don't have to do this) then stir in orange juice, grated rind, salt & cayenne pepper.

Melt a couple of tablespoons of butter in saucepan & stir in about 3 level tablespoons of flour. Stir vigorously over low heat till mixture is smooth and starts to bubble. Remove from heat then gradually stir in the soup mixture. Keep stirring till all the soup has been added, return to medium heat and stir constantly till soup thickens and just starts to boil.

Serve with a sprinkling of grated parmesan and some chopped parsley.
