Word Aversion

I don't think of American cheese as being real cheese. It is overly processed. I try not to eat too much cheese. And I do tend to eat more of the white hard cheeses because the white cheeses have fewer calories and I prefer hard over soft.

Recently, I have tried a few infused with red wine or champagne. That was fun.
 
No cheddar cheese on a grilled cheese sandwich. It has to be melty American cheese.

Borden's sliced cheddar melts quite well and has more flavor than American cheese. I like to use half yellow sharp cheddar and half extra sharp white cheddar.

To my surprise, I've found that I like dill pickle slices on my grilled cheese.

No argument, but do you only make grilled cheese as a closed sandwich? I'm asking because I quite often make it open-faced, and I'm not entirely sure American will crust properly with such a high oil content. Haven't tried it, since I never buy American.
