Sweet plantains, yum. Savory plantain chips and such, yawn. I haven't yet tried mofongo, but it'll probably be a yum if it's nice and garlicky.

You should be able to find taro chips is you look around. You can get them in the bags of mixed root vegetable chips from Terra, and I think Terra sells them by themselves as well. They look nice and festive, with little streaks of purple in the beige root.
