OK, here ya go:
CRAB STUFFED CHICKEN BREASTS
4 large boneless and skinless chicken breasts, halved
4 Tablespoons unsalted butter
2 Bottles drinkable dry white wine (this is subjective, ask your wino friends)
3/4 Cup Whole Milk (2% is marginal, don’t you dare use Skim!)
3/4 Cup canned chicken broth
1/4 Cup white flour (preferably Unbleached)
1 medium onion, chopped
1 7 1/2 oz. can Crab Meat, drained
1/2 Cup coarsely crumbled Saltine crackers
1 4 oz. (drained) can Mushrooms, stems and pieces
2 Tablespoons chopped parsley
1/2 teaspoon salt
a little bit of Garlic Powder if you want
dash of ground black pepper
1 Cup shredded Swiss Cheese (get some good stuff)
1/2 teaspoon Paprika
1. Flatten chicken pieces between waxed paper or plastic wrap and pound out to make about 1/8 inch thick. Good way to release your aggressions for having to make a ‘company’ meal. This is the funnest time you have ever had cooking. Beat that meat! Set aside.
2. In a medium saucepan over low heat, melt 3 Tablespoons of the butter. DO NOT BROWN. Meanwhile, mix the milk, 3/4 Cup of the wine, and chicken broth.
3. Once butter is melted, add flour to make a roux. SLOWLY add liquid and heat until thick and bubbly. Remove from heat.
4. In sauté pan, melt remaining 1 Tablespoon butter. Over medium heat, cook onion until browned and yummy. Remove from heat and add Crab meat, Crackers, Mushrooms, Parsley, Salt, Pepper and 2 tablespoons of the sauce you prepared.
5. Choose your serving method: big casserole dish (13x9 or so) or individual oval dishes (very pretty).
6. Divide filling into 8 portions. Place filling on chicken pieces and roll up. Place in your baking dish of choice, seam side down. Pour sauce over all.
7. Cover with foil. Bake in 350 degree oven for one hour. Drink remaining part of the first bottle of wine because your company is now driving you nuts.
8. After one hour, remove foil. Sprinkle with cheese and paprika for color. Put back in oven until cheese is melty and gooey and yummy.
9. Serve with a green vegetable and some amazing bread, and maybe a salad.
10. Drink the remaining bottle of wine.
