Attention What are you having for dinner?

Last night was Ranch Style Beans with Jalapeno with whole wheat bread--again. End of the month struggle to keep the budget within budget.

My splurge was having some cherries. They were on sale at the store, and I was so glad when I got there and found that no one had gotten my cherries.
 
Vegetarian chili, which I actaully made from scratch, including cooking dry beans. Quite a change from merely opening and heating a can of chili beans...

That's awesome. Was it good?

I used to make a vegetarian chili for my nephews wife with grilled corn off the cob and we enjoyed it.

It was OK, although not the best thing ever. I don't think the supply of chili seasoning I have is the best imaginable...

At least, it was healthy and reasonably cheap. And generated leftovers for tonight.
 
The 48oz Great Value salted caramel ice cream didn't last out the day . I can never buy it again.
Well, if it didn't last even a day, it can't possibly have the value that the brand name suggests!
 
Wednesday is Prince Spaghetti day. Although I didn't use Prince--if it's even still made. The sauce was Classico, which I got during a good sale a few weeks ago. Oddly, stocking up on that sauce is one reason why my grocery budget isn't doing well this month, but the fact I had a supply made dinner easy tonight.

My first Boss, mentor and friend was from Sicily and taught me so much.

He would take 5 or 6 jumbo shrimp(U-10 or 12s) and put them in one of those individual heavy bottom stainless steel casserole dishes. With minced garlic and olive oil,along with half a stick of butter and squeeze of lemon....splash of dry white wine and fresh parsley.

Dust the top with a little super fine breadcrumb.

Put it in a screaming hot pizza oven. You had Scampi in about 4-5 minutes.

Top of the tails would get a bit of char. All that was needed was a hunk of good semolina bread for dunking.

Over the years I've learned so many variations of Scampi but that is so easy and good.

A friend of mine made me homemade pierogi for my birthday.

Potato and cheddar. And sauerkraut.

If you have never had a homemade sauerkraut pierogi they are delicious.

Rinsed and drained sauerkraut to lessen the bite a bit. Saute the sauerkraut with butter onion and some bacon.

Once the pierogi is filled you steam and brown them a bit and serve with more sauteed onions and sour cream.

Sour cream in the pierogi dough keeps them tender.
 
Absolutely...I use Martha Stewart's mom's recipe. yum.

Ususally make potato, cheese and bacon.
 
Last night was pasta. I used the store brand sauce, with "no added sugar"--only to remind myself that I don't particularly like that particular sauce...

I also had a cinnamon roll I found on the the day old shelf. (The day old shelf and the clearance shelves are my favorite parts of the store--I wish the whole store was nothing but clearance! :lol:) I am trying to convince myself that as far as dietary sins are concerned, this momentary lapse in good judgment isn't as bad as it could have been...
