Today, I has marinated a chicken cube steak in lemon, garlic and basil vinaigrette (Newman's Own).
Then I peeled a potato and sweet onion and cut them up (salt pepper and a little Pecorino Romano cheese on them).
I lined the bottom of my Corning casserole with the potatoes and onions mixture. .
I drained the marinade off the cube steak, and then placed it atop the potatoes.
Baked them covered for an hour.
Delicious! (and I have leftover potatoes for another meal!)
 
I threw some skinless bone in chic thighs in the slow cooker with some onion, re pepper, bbq sauce and arborio rice...we'll see.....
 
No idea. All I know is that part of it will be pinto beans, which I'm cooking as I speak, er, type.
 
No cabbages but brussel sprouts are of the same vegetable family. They came in a 2kg bag so that means sprouts yesterday, sprouts today, sprouts tommorow, the day after, the day after that and the day after that. It's a big bag.

My guy made us a chicken burrito bowl. It was absolutely delicious. Cubed chicken, rice, black beans, tomatoes with plenty of tasty spices made in the instant pot. When finished he garnished it with sharp cheddar cheese and sour cream. Going to have some of it for lunch. Yum, yum.
 
Another round of almond butter sandwiches/blueberries/salad.

I'm grateful for almond butter, since I'm sure it's hard to produce. I imaigne it's hard hard milking an almond, since they are so small, and it must take forever to get enough almond milk to be able to churn it into butter!
