Attention What are you having for dinner?

I had four large portabello caps.

Sliced them into strips about 3/4 inch thick. Dredged them in flour I had seasoned with Italian herbs,

Deep fried for a couple of minutes.

Made a dip of horseradish cream, mayo, Dijon mustard, Worcestershire sauce, and a dash of sweet relish.

Ate about 1/3 of them and saved back the rest.

'Twas wonderful.
 
I vaguely recall chilli and cornbread (although the cornbread had no jalapenos) when I was growing up. I think the cornbread got inspired by me seeing it in a children's book of historic/old time American foods. The other bread option I remember was baking powder biscuits.
We actually use our own homegrown pickled chili peppers for some spice and mild heat in the cornbread. Smoked Chipotle or Ancho are a really great addition too.
 
I knocked it out of the park tonight with a fresh from our garden tomatoes, basil, and garlic. I added some frozen scallops and shrimp, some lobster stock and angel hair pasta and olive oil....ba boom....woulda been forty bucks at the local restaurant....
 
Sea scallops over pasta with caramelized leeks, with a side of honey-glazed carrots and fennel.
 
Y'all seem to eat a lot of scallops. Just saying. But I've never seen scallops for sale at the local grocery store.
 
I'm starting to get hungry. I've just snacked on cheese and crackers for the last week. I've dropped 7 pounds.

Yeah. I dunno. Hubby was saying it's hot. It was all of 78f. But it was sticky humid, even to me. So, turn on the heat pump to dry the house.
Walk around closing windows while he's changing into his jammie shorts. And we're talking. About whatever.
He was sitting on the bed and said the heat pump is really doing a great job drying the air and laid back mid-sentence. Mouth half open, eyes wide open. What? I could not tell if he was breathing. Maybe a wisp.... Couldn't hear his heart. I saw his beautiful blue eyes dilate while I was calling 911. It was that fast.

And that's how I lost my best friend. Since oh, 1981. Sure is quiet here. I miss the snoring.

I'm sorry to hear that you lost your husband. I'm sure it still has a profound effect on you, even after all these years. :therethere:
 
Rotisserie chicken, with cranberry sauce and some stuffing I just made up. Had been wanting some for months, and missed making it Easter.

So sorry to read of it. Know that those events change us forever.
 
I made a sort of vegetable stew, using up some black beans and the last of a jar of Better Than Bouillon (a vegetarian "chicken" flavor, which I've felt might work the best for me). So I was able to use up a couple of things, which was good. It was edible--although maybe the beer I drank helped dull my taste buds. :LOL:
 
A friend had to work all day so his boss ordered in a bunch of pizzas. As he was getting ready to leave he texted and said if I had cold beer he had cold pizza.
