How the hell am I going to shake a few pounds when the Chinese restaurant has fries that they rush over in 15 minutes all hot and crispy and salted?![]()
La la la la la la la la la la la la I can't hear you!Do they spit in the deep fryer to see if it's hot enough like they do with a wok?

I live in northern Thailand where it is cheaper to eat out than cook for myself. Most dinners if not all are Thai such as Penang chicken, pad Thai, Kra Pow, chicken fried rice.....pretty hard to beat.
You have to hit them on a slower day. Most Chinese places by us are closed on Mondays for weekly food preparation and other things like cleaning the deep fryer and adding fresh oil.How do they stay hot and -- especially -- crispy for 15 whole minutes in a take-out container?
The whole problem with fries for take-out and delivery is that the steam that builds up inside the container makes the fries soggy.
That's why I never have fries delivered and only get them take-out from the place that's literally next door. They'll let me take the order home without a lid (which is supposed to be against Health Dept. regulations or something) because the trip is so short.
I've spent so much time Jubbing the past few days when I should have been doing other stuff that I may have to postpone making the ersatz chicken paprikash that Vannie coached me on. Meanwhile, I'm having a plateful of blanched asparagus ($1.99 a pound).

And if those jokes about Chinese restaurants serving alley cat are true, then Monday could be a good alley cat hunting day!
