Attention What are you having for dinner?

I've thought off and on over the years of trying something like this.

It turns out pretty good. I use 5 portabellas and trim off the edges and the gills and slice into bite size chunks. The recipe makes enough for several days. Otherwise, the recipe is exactly the same. I use the beef stock even if I use meat.
 
Some pinto beans that I cooked from scratch. Got to get used to cooking dry beans--with inflation, grocery prices might reach a point that dry beans will be the only affordable thing left! And a salad.
 
Included a "Green Curry" frozen entree. I'm amusing myself thinking: I hope it's not green because they accidentally left it out all weekend long at the factory. :LOL:
 
Maple baked ham and veg in cream sauce with fresh cheese and chive buttermilk biscuits.
