Attention What are you having for dinner?

Today I was shocked to see someone throwing out a bag of potato peelings. Who still peels potatoes anymore? They are better cooked with the skins on. What a waste of time and food. Now somebody is going to come on here and say "I always peel them" Ok, if you want to, but why?

I don't peel anything unless it's either necessary or there is some compelling reason. With potatoes, I suppose there are some ways of preparing them that are historically done with them peeled (e.g., mashed). Although those ways are ways I seldom bother serving them.

I think I've heard that unpeeled potatoes are more nutritious, although this isn't something I've verified. What I can say is that unpeeled fits my general lazy approach to cooking much, much better than peeled.
 
If you are making mashed potatoes I can't imagine you not peeling them. We often make the powdered mashed potatoes or buy a premade package of mashed potatoes.
 
A couple of grilled boneless pork chops. Dillons (Kroger) had them on sale 10 for $10. They were a little tough but i may have over cooked them (I used a temp gauge). I'm gonna try baking a couple of them next.

Then the rest will go into the slow cooker with a can of cream-of-something soup. Maybe I'll cut up the slow cooker chops so the finished product will be easier to freeze and reheat.
 
Feta cheese marinated in sweet chilli sauce, mixed salad (lettuce, coriander, red onion, tomato, cucumber, a little chopped red chilli).
