Attention What are you having for dinner?

I had a half of a calzone and and side order of meatballs and a small salad.

Someone rub my belly now or else! :)
 
Leftovers of a sort. Some taco meat, a can of diced tomatoes, a third of a cup of picante sauce (not the sugar loaded crap made by Pace), half a cup of tomato juice. Add a can of water and a couple of fists of macaroni. Mix it all up and simmer on low until the macaroni is cooked.
Might be good. Might be blah. Totally empties the fridge of anything besides cheese, milk, beer, and sour cream.
 
Tonight is a couple of slices of spiral cut ham. Vac sealed February 2021. Heated on the griddle with a bit of bacon grease, just enough to brown a bit. Along with a batch of fake fettuccine alfredo.

It turned out much better than expected.
 
Since they were threatening to take away my Gay Card because I don't make elegant dinners, I decided I'd better do a fancy, multi-course meal. Unfortunately, I never got past making the soup course, so that was dinner. I'm now worrying even more about keeping that Gay Card... 😟

We had a huge feed of fresh corn chowder mid-day so not too hungry.....
 
I cooked today for myself and 3 others. Had an early dinner of Sauerbraten, Roasted garlic mashed potatoes and sweet and sour braised red cabbage with apples. A few pulverized ginger snaps cookies in the gravy and delish. Made a big mixed salad but no one cared. :LOL:

One of my favorite Autumn 🍁 meals.
 
Roasted garlic mashed potatoes

I remember when someone on TV talked about having garlic in mashed potatoes in the 1990s. The idea interested me--partly because I found plain mashed potatoes so dull. I seem to recall he called the garlic something like "nuggets of heaven."

I'm having trouble getting enthusiasm for salads these days. I had too many during my summer salad rut...

And you can use it on/in so many things. Makes so many things extra delicious.

I try to pick out the larger heads of fresh garlic that also have larger cloves. Cut off the woody flower stalk on top and then cut another 1/4 inch off the top exposing the cloves. Drizzle with a bit of oil and wrap in foil keeping the top exposed a bit.

Roast in oven or even a toaster oven for an hour to an hour and a half. They are mellow and nutty and so soft they turn to puree when squished. After that its pure garlic heaven. Limitless possibilities. Squeeze a few cloves into some softened butter for steaks....roast chicken....or any all vegetables.

Or that same butter makes the best garlic bread.

Mash a few roasted cloves with a tablespoon of extra virgin olive oil and stir into a bowl of soup. Canned or homemade.

Yummy in the tummy.

I shut up now. :)

Don't forget omelettes. Non stick pan with some garlic butter or extra virgin olive oil and add eggs....

Ok that's it.

Wait! How about extra garlicky stuffed cabbages! :luv2:
 
I have some pinto beans cooking. Not sure what to do with them, yet. It's a kind of a chilly day, so I want something warm. Maybe chilli. Maybe a fast soup with beans. We'll see...

You forgot the best part: just a little tiny squeeze and they slip right out of their peels.
