We are having the last of a prime rib roast with greens and asparagus with vinaigrette.
Sorry RB I was kidding about the Canadian smoked brisket. :)

I had made a huge Lasagna late yesterday. Layers of ricotta and parmesan and mozzarella. And a layer of baby spinach and sliced sausage.

Cuts beautiful into squares after being chilled overnight. A little extra sauce and run it in the oven.

Delish but I feel like I swallowed a brick now.
 
Brought out a leftover frozen meatloaf and defrosted it and made a meatloaf sandwich with Swiss cheese and green beans. Had two chocolate chip cookies for desert.

Our neighbors gave us some beautiful sea scallops that I will pan sear and create some Scampi sauce. Maybe some rice and baby spinach with it.

I'm hoping Rickrock can get some chocolate chip cookies here by 6:00. :)
 
Cod fish cakes and baked beans with cole slaw.

I already feel 5 pounds heavier.

And fartacious.
 
I had barbequed chicken, fried green tomatoes, summer squash stew-fried with onions, irish potatoes, string beans, and cornbread.
 
So far, some bread, almond butter, and a banana. Weekends should be a time I escape the rut, but got too busy doing other things today. At least I got some stuff done that I should have gotten done a long time ago. Unfortunately, there is a lot more to do...
 
Vegetarian night.

Grilled a bunch of veggies on the grill outside. Broccoli cauliflower zucchini (sorry Hoody... courgettes) par steamed carrots and some small red potatoes.

Made a quick yogurt dip with Greek yogurt garlic lemon zest and some salt and pepper. And a nice wheat baguette from the bakery.

Take that fat cells!!! :jab:
 
Pasta made from chickpeas with a jarred tomato sauce. Whole wheat bread. Strawberries.

Not the best dinner, but at least it's a bit different than the recent rut.
 
I had a 32 ounce container of Fage plain Greek yogurt that was use by today. Made a Penne pasta with lots of minced garlic and extra virgin olive oil and added the yogurt along with grilled chicken and broccoli florets.

Parmesan cheese and lots of black pepper on top and it was good.
 
I made some split pea soup to get rid of some split peas. I also had some whole wheat bread and some green grapes. I just hope the grapes were intentionally green, and not the result of this happening at the grocery store:

"We found some moldy grapes in the corner of the warehouse!"

"Label 'em green grapes. We can get rid of them and make a bit of profit."
