I have two very small ripe avocados that need to be used. I have several nice ripe tomatoes out. And I have leftover cooked bacon. And half a head of iceberg lettuce in the refrigerator.

I guess the obvious. :)
 
Chicken salad and Colby cheese on saltines. With a side of steamed (microwaved) cauliflower. A frosted/iced sugar cookie to finish off the meal.
 
Just had scrambled eggs and toast for dinner. Did not feel like working very hard...
 
Tacos. With canned diced tomatoes because (a) I'm too lazy to go to the store and (b) the tomatoes at the store are flavorless.
I'm sure someone will complain we are out of sour cream. See (a) above.

I've said this before here, but I'd rather have a canned tomato than a grocery store tomato much of the time. It frankly seems pointless bothering with sour and flavorless fresh tomatoes.

I saw a recipe video that included fresh tomato, and had a brief mention of the "best" choice for that perosn this time of the year. I'm glad the choice apparently works for him, but my choice--which works well for me--is just not to bother.

Most of our fruits and vegetables are picked so early - so long before they are ripe - and then brought over on ships. Very seldom do you get local - fresh - vine ripened tomatoes (or anything else).

I remember as a kid everything had seasons and you only got things like corn on the cob or peaches in July - September which is when they were ripe. Now they are imported from whatever country they are in season but due to the transportation time they are picked way too soon to have the flavor they used to.
 
^So true. And I've noticed that a lot of stuff that is allegedly in season is often not very good. I imagine stuff gets picked too early, even if it's fairly local, for the convenience of shipping. Modern agricultural practices when growing stuff probably doesn't help, either.

I've also heard nutritional quality has gone down dramatically, which I wouldn't doubt.

Chilli and cornbread with jalapenos.
I vaguely recall chilli and cornbread (although the cornbread had no jalapenos) when I was growing up. I think the cornbread got inspired by me seeing it in a children's book of historic/old time American foods. The other bread option I remember was baking powder biscuits.
