Split pea soup. Some pasta with sauce.

I finished off with an apple for the day, which I'm sure will keep the doctor away, even if it was baked into a single serving pie! :lol:
 
I finally remembered to thaw one of the pieces of pork loin I put back when I bought the wole loin months ago.

Browned it, added spices and crocked it for about five hours.

I've strained the stock and will use it to make rice. But, before that, I'm taking a cold roast sandwich on mayo to work for lunch. I really, really love those.
 
Ham sandwiches before we go out to help at a charity event where there will be desserts later.
 
I've been on a fruit binge.

Yesterday, at lunch at work, I heated up some farfalle with bits of beef roast I had mixed in, and then added a broccoli & cheese soup as a sauce, so had a really good, really lazy casserole.

So, when I got home, I didn't really need supper. Had to run an errand about 6:30, so really didn't want to eat at 8:00 when I got home.

Instead, I had a fruit salad I had made that morning, with blueberries, strawberries, bananas, sliced green grapes, apple, and a few min-marshmallows, glazed lightly in vanilla pudding.

Was heavenly, so refreshing, and no repeats when I slept. Love fruit.

We're heading into the time of year when my fruit consumption will go up dramatically. Unless, of course, summer fruits end up being totally unaffordable this year, thanks to the way grocery prices seem to go up faster than a thermometer dropped into a vat of boiling oil.
 
I heated a package of curry chickpeas for dinner last night. I had a salad and whole wheat bread, too.
 
Had leftover rotisserie chicken breast and leftover cooked bacon.

Made a nice big chicken club sandwich on whole grain bread.

Now I need to find something for dinner. :LOL:
 
Oatmeal. I wasn't terribly hungry, and I also don't have much in the pantry at the moment. Instacart will arrive tomorrow afternoon.

I love a pure comfort meal of oatmeal and butter some days when I am not all to rights.

It is also perfect with some grated cheese.
 
I cleaned the kitchen a bit, and then cobbled together a burrito of leftovers: chunks of hot sausage patties, a generous slosh of green chili and tomatillo salsa, a large slosh of canned roasted red peppers, half a can of frijoles refritos, and a cup of rice I had left over from the pork roast rice.

Took it off the fire and laid some Velveeta I had sliced up into sandwich slices a while back and frozen.

It was incredibly good. I'm going to eat tthe rest over the weekend with some fresh onion and cilantro to brighten them slightly.

Now I'm waiting for the lemon curd to cool so I can layer it with leftover lemon raspberry cake as a trifle with whipped cream.
 
Last night was another round of curry chickpeas and a salad.

I had some healthy potatoes too, which--on their way to me--had taken a quick trip through the Pringles factory. Although I almost wish I hadn't. I have fond memories of Pringles when I was young, and they just weren't what they are in my memory.
